Growing up in New Jersey, there is a diner in every town. It is a place to hang out after football games, or dances. Or a place to grab breakfast after church. Whatever the case, everyone has their favorite dishes, and they are iconic. Diner food is a part of many of our childhoods and well our grown up lives too. The food is iconic and nostalgic to us! Just about every diner has it’s specialty as well.

 

This Grilled Cheese with Tomato gets special treatment with a pickle and Dill Mayo tucked inside. One of my favorite things to order early on at the diner was a Happy Waitress before I graduated to more complex dishes such as a “greek wrap.” With fries on the side and a pickle, I was one happy camper. Don’t forget the vanilla coke, before there was “vanilla coke.” No I am not so old that this was like 50 cents, so stop that.

 
 

The Ultimate Grilled Cheese with Tomato

A little bit of make ahead sunshine for your mornings! Pineapple and coconut with creamy vanilla flavored chia seed pudding is a nutritious and delicious way to start your day!

ingredients

  • 2 thick slices of bread (white or Italian, even rye!)

  • 1 beefsteak tomato, sliced

  • 3-4 slices cheddar or American cheese

  • 2-3 dill pickles, sliced

  • 3 tbsp mayo

  • ½ tbsp. fresh dill, chopped

  • ½ tbsp butter

instructions

  1. Mix together the mayo and dill until well combined.

  2. Spread a layer of the dill mayo one side of each piece of bread. Layer slices of cheese on top of one piece of bread. Then layer on your pickles, following with the slices of tomato. Place the other piece of bread mayo side down on top.

  3. Heat a medium size frying pan or skillet, over medium low heat. Melt the butter in the pan, then place your sandwich in the pan, 4 minutes on each side until golden brown on each side. I will cover it with a large lid for the last 4 minutes to help the cheese melt.
