Basil Hummus


This was a quick dip I made when having a play date with my best friend and her son. While I am sure it not a new idea, it came out really good. You can read the full post about creating a Play Date Snack Board on the family section of this blog!

ingredients

  • 1 can (15 oz) chickpea or garbanzo beans

  • 1/4 cup of tahini

  • 1/4 cup olive oil

  • 1 1/2 cup basil leaves packed

  • 2 tbsp lemon juice

  • 1 tbsp water

  • 1 tbsp grated Parmesan cheese

  • 2 tsp kosher salt

instructions

  1. Rinse and drain the canned chickpeas

  2. In the bowl of a food processor, place the basil leaves Pulse until finely chopped.

  3. Then, add the chickpeas and pulse together until the mixture is grainy.

  4. Add the tahini, cheese, olive oil, lemon juice, salt,

    Pulse several times, for several seconds each time, until the hummus is smooth

  5. Drizzle in water as needed to achieve the consistency you want.

RECIPE NOTES: Make sure to scrape down the sides of the bowl between pulses. Also, taste along the way adding more salt or lemon juice.
