Caramelized Balsamic Radicchio


Winter produce on the east coast can get a little tricky. However, it the perfect time to start experimenting with produce you maybe haven’t given a second look before. Radicchio can be rather bitter and not everyone loves that. However, caramelized with sweet yellow onions and then simmered in balsamic vinegar this leaf vegetable becomes your new favorite.

Caramelized Balsamic Radicchio

ingredients

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1 yellow onion, sliced thin

  • 1 head of Radicchio, cored and thinly sliced (about 4 cups)

  • 1 tsp kosher salt

  • 1/2 tsp pepper

  • 1 tsp sugar

  • 1/4 cup balsamic vinegar

  • 1 tbsp pine nuts

instructions

  1. In a large saute pan heat the butter and olive oil

  2. Add the onions and stir to coat. Let the onions simmer becoming soft and brown over a medium-low heat.. Sprinkle sugar over top and saute gently for about 15-18 minutes.

  3. Then add the radicchio and stir gently. Once radicchio is wilted (about 5 minutes) add the balsamic vinegar, salt and pepper. Gently stir.

  4. Let it simmer until the liquid is absorbed.

  5. Meanwhile, in a small saute pan add the pinoli nuts over low heat and toast them quickly, remove and reserve.

  6. Once all the liquid is absorbed transfer radicchio to a plate and top with pine nuts, and serve.
