Crispy Fluffernutter Truffles


While making the traditional candy Easter eggs Brian became inspired. I have to give him credit for this recipe. He had been asking me to buy “fluff,” which is a substance mimicking melted marshmallow. I must admit it is very good but I know it is just SUPER bad for you. It is not something that makes it onto my regular grocery list. Since Brian is always so helpful with my photos and videos I thought I owed him some treats!

Crispy Fluffernutter Truffles


ingredients

  • 1 c powdered sugar

  • 2 Tbsp unsalted butter melted

  • 1 c creamy peanut butter

  • 3 tsp fluff heaping spoonfuls!

  • 1 1/2 c rice krispie cereal

  • 1 1/2 c chocolate chips

  • 2 Tbsp crisco (this is for melting with the chocolate chips. You can also use coconut oil!)

instructions

  1. Mix peanut butter, fluff, and melted butter together in a large bowl. Use a flat scraper spoon if you can. You really have to work in the fluff!

  2. Add powdered sugar and rice krispies.

  3. Mix until combined. I even used my hands to kind of work everything together.

  4. Form one inch balls and place on a wax paper lined cookie tray. Then chill in the refrigerator. After about 30-45 minutes they should be cold enough to coat them in the chocolate.

  5. Melt the chocolate and crisco in a glass bowl over a small pot of hot, almost boiling water, a make shift double boiler!

  6. Drop each ball into the chocolate one by one. Roll the ball around and then with the help of two forks lift the ball out and let the excess chocolate drip off. Then place it back onto the wax piece of paper. *you could also use a toothpick to dip the balls.
