No Bake Peanut Butter Chocolate Energy Bites

One rainy quaratine afternoon we decided to make all things oats. Since we were going to be in the kitchen together we decided to let the video camera run. We made no bake peanut butter chocolate energy balls, Brian’s favorite. Then a chewy granola with toasted coconut, oats, and raisins. These are great recipes to make with your little ones in the kitchen!




No Bake Peanut Butter Energy Bites

ingredients

  • 1 cup quick oats

  • 1 cup peanut butter (I use a creamy peanut butter, or honey roasted)

  • 1 cup pitted dates

  • 1 tbsp flax seed

  • 1/4 cup unsweetened coconut flakes

  • 1 tbsp honey

  • 1 tsp vanilla

  • 1/3 cup chocolate chips

instructions

  1. Prepare a baking sheet with parchment paper.

  2. In a food processor fitted with an S blade add in the dates, coconut, flax seed, vanilla, and half of the oats. Pulsed until the dates are chopped up .

  3. Add the mixture to a large bowl. Add in the rest of your oats, peanut butter, and honey. Mix with a rubber spatula until well combined.

  4. Then fold in the chocolate chips.

  5. WIth your hands, roll them into two inch balls and place in the refrigerator to firm. Store in an airtight container for up to a week.
