Banana Oat Cookies

Banana Oatmeal cookies are my healthier attempt at a Valentines Day treat. I am pretty sure I bake banana bread of some form at least every other week. As this chocolate laden holiday approaches I thought, why not attempt a play date friendly treat other moms would be happy about. I am proud of myself for making a cookie without white flour or sugar. Not to say there isn’t brown sugar and some Nutella frosting action. But hey, I said it was a treat!

Banana Oatmeal Cookies with Nutella Frosting

ingredients

  • 2 cups quick oats

  • 1 3/4 cups whole wheat flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp kosher salt

  • 1/4 tsp cinnamon

  • 2 bananas, mashed

  • 3/4 cup, unsalted butter, softened

  • 1 egg, beaten

  • 1 tsp vanilla

  • 3 tbsp maple syrup

  • 1 cup brown sugar

  • 3/4 cup of add in of your choice such as chocolate chips, sprinkles, and etc. (optional)

instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat.

  2. In a medium mixing bowl, stir together the oats, whole wheat flour, baking powder, cinnamon, and salt until combined. Set aside.

  3. In a large mixing bowl mash the banana then add the butter, and mash together. Then add the egg, brown sugar, maple syrup, and vanilla extract and beat on medium high with a mixer until very well combined, at least 3 minutes, stopping to scrape down the bowl as needed.

  4. Then add the wet ingredients into the dry ingredients. Mix on a low speed until the four dissolves . If you are mixing in chocolate chips, or in my case valentines day sprinkles! Add up to 3/4 cup of the mix in and fold in gently with a rubber spatula.

  5. Cover the bowl and place in the fridge for 30 minutes.

  6. After 30 minutes remove from fridge and preheat the oven to 350 degrees.

  7. With a large cookie scoop , scoop the dough onto the prepared baking sheet. My cookie scoop yielded almost 2 tablespoons or so per scoop. This yields about 10-12 cookies.

  8. With a back of a spoon gently press each ball dough to flatten them a bit. They will spread out as they bake.

  9. Place in the oven for about 15 minutes. Remove and let them cool before handling them.

  10. Once cooled top with nutella. Using about a 1/2 tablespoon of nutella per cookie. Spread the nutella over the cookie with the back of a spoon.
