Fig Goat Cheese Mascarpone Trifle

Sometimes the dishes you put together on a whim are the best ones. I had some pound cake sitting on the counter. A long with a large bunch of figs I couldn’t resist at the store. As the first gloomy day of the impending fall wore on this perfect dessert was created. The best part is that it is half homemade, making it a super quick dish for entertaining.

Fig Goat Cheese Mascarpone Trifle

ingredients

  • 1 pint of fresh figs, sliced

  • 2 tbsp brown sugar

  • 2 tbsp unsalted butter, divided

  • 4 sliced of pound cake, cubed

    Mascarpone

  • 2 cups mascarpone

  • 1 tbsp honey

  • 1/4 tsp cinnamon

  • 1 tbsp powdered sugar

  • 2 tbsp goat cheese, crumbled

  • 2 tbsp almond or whole milk

instructions

  1. Heat a tablespoon of butter in a pan.

  2. The figs and place them cut side down in the brown sugar. Coating the cut side. Then place that side in the butter, in the pan.

  3. Let the figs saute until they become caramelized, about five minutes. Remove from the pan and set aside.

    Mascarpone:

  4. In a medium size bowl combine the mascarpone, honey, cinnamon, goat cheese, powdered sugar, and mlik. Whip with an electric mixer until smooth.

    Assembly:

  5. In individual ice cream cups or low bowls, place a layer of pound cake cubes. Then scoop two tablespoons (and a little more to cover the top of pound cake if necessary) over the top of the pound cake. Then place 3-4 figs on top. Garnish with a little bit of cinnamon if desired.
