Skirt Steak with Goat Cheese Butter
1lb skirt steak
1/2 cup olive oil
2 cloves garlic, chopped
1 1/2 tsp kosher salt
1 tsp pepper
1/2 tsp red pepper flakes
1/4 cup lemon juice
1/2 cup sliced white onion
1 tbsp fresh rosemary
1 tsp calabrian chili oil
Whipped Goat Cheese Butter
1/2 cup butter, softened
1/4 cup goat cheese
3 tbsp mascarpone cheese
1 tsp rosemary
1 tsp kosher salt
1/2 tsp black pepper
Season the skirt steak with the salt and pepper.
Whisk together all marinade ingredients. Pour over the steak and cover. Refrigerate for 30 minutes or up to 6 hours.
Remove the steak from the refrigerator and let it come to room temperature
Meanwhile, add the ingredients for the butter to a small bowl, whip together using a hand mixer or a rubber spatula. Set aside.
Preheat a grill pan on medium high heat, brush with vegetable oil or olive oil.
Grill over moderately high heat until well-browned outside and medium-rare within, about 3 1/2 minutes per side. Transfer to a carving board and let rest for 5 minutes. Thinly slice the steak against the grain and serve with the butter
