Baby bella mushrooms sauteed in butter with shallots, then cooked down in sherry is the cozy pasta dish you need on repeat. Sauteing shallots and mushrooms together in butter is a great side dish all on their own. However, making them into a creamy sauce takes it to another level.
The ribbons of mafaldine pasta swirl into this dreamy sauce. You could also use papadelle or a short rigatoni. This sauce has a touch of cream and Parmesan cheese making this bowl feel like warm hug in the mountains of Italy! Or maybe I am just dreaming?
