Grilled Sausage and Grapes Sandwich with Goat Cheese


Grapes on a grill?! Yes, this makes them jammy, juicy, and the perfect companion to sweet Italian Sausage. Take an Italian roll and throw that on the grill for a minute for an extra crunch. Stack the sandwich with fresh arugula, a smear of an herby store bought goat cheese, and top with sauted onions.

 
 
 

Grilled Sausage and Grapes Sandwich with Goat Cheese

 


ingredients

1lb sweet Italian sausage (5-6 links)

2 tbsp unsalted butter

1/2 yellow onion, thinly sliced

1/4 tsp kosher salt

1 tsp honey

1/2 tbsp balsamic vinegar

1 bunch red seedless grapes, keeping stems intact

1 cup granulated sugar

1 cup arugula

4 oz herb goat cheese

3 Italian Rolls

1.        Preheat the grill to about 425 degrees.

2. In a medium to large saute pan melt the butter over medium/low heat, add the onions and let saute for 5 minutes. Season with salt, and add the grapes to the pan. Let grapes and onions saute for about 8 minutes, periodically moving the onions around the pan.

3. After 8 minutes remove the grapes from the pan. Add the honey and balsamic vinegar over top of the onions, stir gently to coat, saute 5 minutes more. Remove from heat and reserve.

4. Add the sausages to the grill. Flip the sausages after 10 minutes.

5. Add the grapes to the grill and cook both the grapes and sausages 5-7 minutes more until the internal temperature reaches 165 degrees and grill marks appear on the grapes. You may want to flip the grapes a couple minutes into grilling as well.

5. In the meantime, cut the rolls in half and drizzle olive oil over the cut side. Place the cut side down on the grill, and grill for about 2-3 minutes until grill marks form. Remove from grill and set aside.

6. Spread the goat cheese on the bottom half of the bun. Then layer on aruguala, and some of the sauted onions.

7. Remove the grapes from the stem and sprinkle some grapes over top of the sauted onions.

8. Cut the sausage links in half and lay them cut side down on the sandwich. Top with other half of the roll, pressing down firmly and serve.
