Easy Lamp Chops with Greek Yogurt Sauce

Lamb isn’t for everyone. However, if you have not tried it, you should! It has a totally different flavor than your everyday steak. These lamb chops are quick and easy. Pair them with smashed potatoes recipe on the blog and you have an amazing dinner for a special occasion.

Easy Lamb Chops with Greek Yogurt Sauce

ingredients

  • 1lb lamb loin chops

  • 2 garlic cloves, chopped

  • 1/4 cup olive oil

  • 1/4 tsp kosher salt

  • 1/4 tsp thyme

  • 1/8 tsp black pepper

  • 1/8 tsp cayenne

  • 1/4 tsp onion powder

  • 1 tsp fresh oregano chopped

Yogurt Sauce

  • 1 cup greek yogurt

  • 1/3 cup green onion, chopped

  • salt and pepper to taste

instructions

  1. In a small bowl whisk together the olive oil, garlic, salt, pepper, cayenne, onion powder, thyme, and oregano.

  2. Place the lamb loin chops in a pyrex dish. Coat with the marinade, and cover. Place in the refrigerator for 2 hours.

  3. After 2 hours remove from fridge and let them come to room temperature.

  4. Heat a grill pan with a tablespoon of olive oil over medium-high heat. Sear lamb chops for 3-4 minutes on each side. Transfer to a plate and cover with foil to rest before serving.

Yogurt Sauce

  1. In a small bowl whisk together the yogurt, salt, and pepper. Gently fold in the green onions.
