Smashed Potatoes with Pomegranate Glaze

Smashed Potatoes with Pomegranate Red Wine Glaze


  • 1 lb of yellow or red baby potatoes

  • kosher salt

  • pepper

Pomegranate Red Wine Glaze

  • 1 1/2 cups pomegrante juice

  • 1/4 cup red wine

  • 1/4 cup sugar


  1. Preheat the oven to 450 dgreens

  2. Fill a large stockpot halfway with water. Add the potatoes and liberally salt the water bringing it to boil. Boil the potatoes until they are tender and can be easily pierced with a fork.

  3. Drain the potatoes and let cool.

  4. Prepare a large baking sheet with sides with olive oil, coating the pan. Add the potatoes to the baking sheet. Smash each potato with a strong fork or potato masher.

  5. Sprinkle kosher salt, pepper, and all herbs over the tops of the potatoes. Place into oven and bake for 20 minutes, or until browned on the top.

Pomegranate Glaze

  1. Combine juice, red wine, and sugar in a medium saucepan over medium heat, and bring to a boil. Cook until reduced to 1/2 cup (about 8 minutes).
