Sparkling Strawberry Pancakes with Champagne


The holidays are here and all things festive are in full swing. These sparkling pancakes are sure to keep the party going long after dinner is over. This pancake recipe is great way to treat overnight guests to something special. Use a little bit of Barefoot Bubbly Brut Cuvee Champagne and strawberries in this batter to keep the holiday spirit alive. Everything seems to have an extra bit of sparkle around the holidays. So why not add that sparkle to your food with using unexpected splashes of flavor!

Every year I host a holiday “Brinner” for my friends. Everyone shows up in their pajamas and we eat breakfast foods for dinner. It is a break from the traditional cocktail parties and dinners. Everyone gets to be laid back and festive at the same time. Along with these pancakes I have served candied bacon, a champagne spiked egg casserole, and sugarplum fairy sangria. The best part of these items is they are make ahead. Which means I get to jingle and mingle as well!

 Sparkling Strawberry Pancakes
with Champagne

Perfect for a brunch or post holiday breakfast. Add a little champagne to your batter for extra fluffy pancakes.


  • 1 large egg

  • 3/4 c milk

  • 2 Tbsp white vinegar

  • 1 1/2 c flour

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 2 Tbsp sugar

  • 1 tsp vanilla extract

  • 1/4 c Barefoot Bubbly Brut Cuvee

  • 1 c strawberries, chopped


  1. Combine milk and vinegar in a bowl and let it sit 5 minutes.

  2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

  3. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Then add the champagne and stir to incorporate.

  4. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Then add a couple of strawberries. Flip with a spatula, and cook until browned on the other side.
